Do you need an easy dinner recipe that’s packed with fresh vegetables that the whole family will enjoy? Then try out this delicious vegetable pasta! Not only will this recipe satisfy your dinner cravings, but it also offers lots of various health benefits from the veggies. This dish uses a variety of vegetables such as zucchini, bell peppers, onion, and kale, making it a plant-forward dish that your taste buds will love.

Ingredients

Pasta: 8 ounces of your favorite pasta such as penne, rotini, ziti, or fusilli
Vegetables: 1 small zucchini, 1 bell pepper, 1 cup chopped kale leaves, 1/2 red onion, 4 cloves garlic, 1/2 teaspoon crushed red pepper flakes
Topping: 1/3 cup freshly grated Parmesan cheese, 1/4 cup chopped fresh parsley leaves, 2 tablespoons olive oil
Seasonings: Salt and pepper to taste

Instructions

1. Bring a pot of well-salted water to a boil and cook the pasta according to the package instructions. Drain and set aside.
2. While the pasta is cooking, prepare the vegetables. Chop the zucchini, bell pepper, and red onion into small cubes. Peel and mince the garlic. Remove the stems from the kale.
3. Heat olive oil in a large skillet over medium heat. Add the diced vegetables and garlic. Saute for 5 minutes and season with salt and pepper.
4. Add the crushed red pepper flakes and cooked pasta to the pan and stir. Cook for an additional 2 minutes.
5. Turn off the heat and stir in Parmesan cheese, parsley and additional olive oil if desired.
6. Serve hot and enjoy!
